ECC Students “Taste the Rainbow”

This week in Seed-to-Table class at Maplewood Richmond Heights Early Childhood Center, students learned to “eat the rainbow”. Parents are encouraged to ask their children what the four superpowers of fruits and vegetables, or “green light foods”, are, and they will tell you, the superpowers are vitamins, minerals, fiber, and phytos. Phytos, or phytonutrients, are protective antioxidants, such as beta carotene, lycopene, flavonoids, and anthocyanins.

Phytos can be seen in food by their bright colors. Your student can tell you that eating the rainbow is important in order to consume all these phytos. When they eat different colors, they are eating different phytos.  Phytos help protect our bodies from germs and diseases.

Kindergarteners made fruit salad with six different colored fruits of apple, banana, blueberries, kiwi, watermelon, and peaches. First grade students made vegetable salads with the different colors that are seen in spinach, tomato, corn, black beans, red cabbage, cauliflower, cucumber, and carrot. Most students gave their snack a thumbs up on their thumb-o-meter, so try making this snack at home!
