MRH Chef Serves Up Some Love on Valentine's Day
It's only Valentine's Day once a year, but Black History Month is observed for 28 days. So every Thursday during February, Chef Chris Coggins is whipping up special meals with a nod to African-American culture for students and staff at MRH High School and Middle School. Today, the lunch menu calls for Piri Piri chicken, a spicy, roasted dish hailing from Angola and Mozambique, with some influence from Portuguese cuisine. Completing the meal is Jollof rice, the precursor to Creole Jambalaya and a side of curried spinach.
